    Join us for a very special day at Wasing Estate with Dean Teyla, The Conscious Breath Coach.

    Whether you are new to cold water immersion or have a regular practice, this day will give you the chance to recharge and reset.

    We will begin the day at our yoga studio, the Pavilion, where Dean will guide you through some gentle movement, breathwork and an ice bath experience, followed by a delicious, light vegan lunch.

    After lunch, our Wellbeing host will guide you down to the wild swimming lake and wood fired Scandinavian sauna to enjoy the facilities at your leisure.

    New Covered Outdoor Terrace

    New to Wasing Park, our new covered terrace with a floating stretch tent alongside the majestic grade II listed Castle Barn.

    Adorned with sheepskins, fairy lights, candles and a fire pit, this new area will give guests an alternative alfresco area that can be used all year round. Guests who are less comfortable eating inside will now have the perfect alternative space. The stretch also enables Wasing to offer more dining capacity; up to maximum numbers whenever restrictions are put in place. Their outdoor kitchen creates great theatre too for diners on the terrace.

    Wasing Events Manager, Lisa Buffery, says the soft uplighters, speakers, heaters and fire pit have made the covered terrace a beautiful and versatile additional space for guests: “The new covered terrace will provide a more usable space that can be enjoyed all year round. The idea stemmed from the Covid 19 pandemic but it has developed into a very special area for use by our wedding couples and corporate guests and it can seat 50 people for lunch or dinner.”

    Wedding Drinks Reception Recommendations

    Believe it or not, sherry was once the tipple of choice served at wedding receptions.

    Arguably the quality of sherry has sky-rocketed over the last few decades so these days it probably wouldn’t be a bad idea, although it’s unlikely to slip down too well for the majority of the wedding party.

     

    Pimms has had its day in the spotlight too; the red sweet spirit diluted with lemonade and full of fresh fruit, cucumber and mint arguably slips down too well! Personally, unless it has a shot of vodka to provide some kick, Pimms wouldn’t top the bill of any special occasion I was hosting.

    So, the question is, what should you serve as the apéritif at your wedding?

     

    Cocktails have seen a rise in popularity in recent years but it’s tricky to choose one that everyone will enjoy, so to my mind bubbles is the answer.

    As Madame Lily Bollinger famously said: “I drink champagne when I’m happy and when I’m sad. Sometimes I drink it when I’m alone. When I have company I consider it obligatory. I trifle with it if I’m not hungry and drink it when I am. Otherwise, I never touch it — unless I’m thirsty.”

    But bubbles doesn’t have to mean Champagne. Prosecco is the much-loved fizz of choice for most, but as this is your wedding I would recommend pushing the boat out a bit and consider an English sparkling wine. Ten years ago people might have scoffed at the thought of serving a wine from England on their special day, however the quality and variety has come on leaps and bounds and now you would be hard-pushed to find anyone who hasn’t enjoyed a glass or two of great British bubbly.

    The Langham Wine Estate in Dorset was recently named Sparkling Wine Producer of the Year by the International Wine & Spirits Competition (IWSC) seeing off more than 700 entrants including Champagne houses and Prosecco brands.

    The sparkling wines of Langham are an excellent choice as the most important day of your life commands the ultimate sparkling wine to ensure proceedings start with a bang (or pop).

    Whilst it might be tempting to go for the ever-so-pretty and delicious 2017 vintage Rosé, I would suggest Langham’s Corallian Classic Cuvée NV will really whet the palates of the assembled wedding party.

    This chardonnay-dominant classic cuvée is a fresh and aromatic sparkling wine. A pale gold colour with a stream of fine bubbles, this award-winning English sparkling wine has aromas of cut grass, oyster shell and baked apple. The palate has a fine mousse with a saline focus. Stewed apple flavours with an integrated citrus acidity and a long finish. It is both fresh and complex.

    Corallian Classic Cuvée NV is available from Langham Wine Estate priced £27.50 per bottle.

    Don’t forget to consider the soft drink option too! Orange juice is often the default choice, but there is a huge and growing selection of non-alcoholic drinks now available.

    From flavoured waters, posh tonics and hard seltzers, there is a lot to pick from. Wasing stock a delicious range of Gusto Organic drinks. Bursting with botanicals, have a taste of the Sicilian Lemon with Yuzu or the Real Cola.

    Finally, it’s important to calculate how many bottles of bubbly you need to allocate for your reception drinks. The usual recommendation is 1.5 glasses per person, but I would always over order and if there are bottles leftover you can take them home and continue the celebration.

    When you host your wedding at Wasing Park the majority of wines need to be purchased from the venue but couples are allowed to supply a limited amount of top up wine for their wedding breakfast and fizz for the drinks reception.

    The Best Wines For Your Wedding Breakfast

    When the wedding dress has been selected and the bridesmaids and groomsmen appointed, next on the to do list is usually the food.

    The food is an important part of any wedding day and a time when your nearest and dearest break bread and come together in celebration. And no celebration would be complete without raising a glass or two so I urge you not to leave choosing your wine to accompany the wedding breakfast until the last minute.

    Whether you’re a wine enthusiastic or just enjoy a bottle with your midweek meal or at the weekend, it’s important to pick a white and a red that will be crowd pleasers.

    Not too heavy and alcoholic, we don’t want Uncle Tom snoozing before the band gets going, but wines with a bit of personality and that will go nicely with the food.

    Some might like to get into the intricacies of food and wine matching to ensure each course is perfectly paired with a wine that complements it, whilst others will just want an enjoyable bottle that won’t disappoint.

    As a rule of thumb I would offer the following basic tips when pairing wine with food:

    • The wine should have the same flavour intensity as the food.
    • The wine should be more acidic than the food.
    • Red wines pair best with bold flavoured meats like lamb and beef.
    • White wines pair best with light-intensity protein like chicken and fish.
    • It is better to match the wine with the sauce in the dish than with the meat.

    But if that all sounds a little bit too much to consider then I would pick a white and red wine that you enjoy and think others will too. The Wasing team will be able to offer guidance should you seek it.

    For the red, Pinot Noir is a safe bet. Lighter than most reds, it has delicate flavours and often works with both meat and fish. Alternatively, choose a Syrah from a cool climate winemaking region so it’s not too jammy or heavy.

    For the white, Sauvignon Blanc usually hits the spot; but why not try a light, bright Albariño or a zesty Picpoul de Pinet – especially if you are having a seafood starter or traditional fish and chips for the main course.

    I’m have been asked in the past if it’s ok to serve different wines at the top table to the rest of the wedding party. My advice would be no, however it’s your special day so you can make your own decision. As a minimum I would be discreet about it as you don’t want anyone to feel not worthy or envious of your exclusive wine stash.

    I love wine but I also love water too so ensure there is gallons on hand in bottles or jugs and lots of interesting soft drinks as well. The drivers and those who don’t drink alcohol would appreciate a choice that extends beyond a glass of coke or an OJ. There is an unending choice these days that even extends to non-alcoholic spirits so people can enjoy a no or low alcohol ‘G’&T.

    And last, but by no means least, we should talk about bubbles. Champagne or sparkling wine would always be my reception drink of choice and it’s a must for the traditional toast which takes place during the speeches following the wedding breakfast.

    Whether your budget stretches to Champagne, English Sparkling, Prosecco or Cava I would choose something relatively dry and crisp. This will quench everyone’s palate at the drinks reception and go well with a selection of canapés. Bubbles are always served for the toast so I would keep it simple and stick to the same brand you served as an apéritif.

    Weddings have been given the go ahead and we are very excited to start planning some micro weddings over the next few months. These smaller weddings do have a number of restrictions placed on them, but as creative wedding industry professionals we are looking for innovative ways to make these weddings exciting and unique. Who knows these new ideas could mean a change for the “normal” weddings in the future as well? 

    At the moment we find ourselves unable to serve canapés in the traditional way, instead they must be served individually to your guests while they remain seated at a table.

    We sat down with our Executive Chef Stu to find out his ideas.

    “In my opinion, plating canapes, loses the theatre and wow factor from the presentation. Canape service is intended to be enjoyed during your drinks reception, staggered over a period of time whilst chatting with friends and loved ones.”

    However, fear not, we have come up with an alternative plan to keep the celebrations going and the food looking amazing!

    “Why not have a bespoke, brand new dish created by you, to get the meal started with a bang. Instead of having 4 plated canapés, let’s create a personalised dish, call it an amuse-bouche or a pre-starter if you like. I intend to work with the couples, adding in my own experience of catering for weddings over the last 10 years whilst at the same time pushing my culinary boundaries, to create a dish that is something to remember. The idea is that together we will create something that is fun, different, with no boundaries, personalised to the couple, homing in on seasonality and locally produced ingredients to maximise flavour.”

    With a smaller number of guests, there really are no limits as to what we can produce.

    Top Ideas To Plan Your Wedding Playlist Songs

    For many couples and guests, one of the most memorable parts of your wedding will be the amazing reception in the evening. One thing which can make or break a reception is the music! Music is very personal and can be used at your wedding to reflect who you are as a couple.

    Whilst it is important to take into account that the music played at your wedding should be accessible and fun for your guests, you should also remember that this is your special day. So, when it comes to song choice, you are the ones in charge. The best place to start is with your current music collection. Look through this together and come up with a few must have songs that hold sentimental value to you.

    It might be nice to include songs from when you first met, or an important point in your lives together. Set aside some time, or make an evening of it, to plan your playlist.

    After making your initial list with your fiancé, you could reach out to your wedding guests and see what requests they have. A really popular way of reaching out to guests ahead of the big day is by using the invitations, leaving a blank space asking guests what song they’d like to hear played at the wedding. You could also leave music request cards by the DJ booth, or on the dinner tables themselves. This is a good way to get guests chatting about their favourite music!

    Host a group zoom call, with all of your bridesmaids, or groomsmen, and throw a party! You could send everyone a mini party kit beforehand with the ingredients to make your signature cocktail, or a mini bottle of bubbly each! Ask each of your friends to list 10 songs that they’d want you to play at the wedding. This is a really fun way to build your playlist with your besties, whilst having a catch up at the same time.

    There are a few rules of thumb when it comes to planning your wedding playlist, one that’s relatively important is to remember to play one slow song for every five fast songs. This way your guests won’t be exhausted with 3 hours of partying to go! It can also be a good idea to include a mixture of genres and eras of music. This way it gives a chance for everyone to have a song that they know and can dance along to.

Music really makes the day, which is why it’s so important that you spend some time finding the playlist that really suits you and your fiancé.
